If you are calm [internally as well as externally] your dog learns to be calm. Most people teach their dogs to become excited by touching them when they are excited. Calmness is rewarded by touch. Dogs soon learn how to be calm in this way. And yes structured exercise is one of the best ways.
At home, ear massage can also help with some dogs as they have a lot of accupressure points in their ears.
